Broken down into round fish and flat fish here we will look at some types and
uses.
There are more round fish than listed here, different bass, mahi mahi, tuna, sword etc.
Round fish
Cod – brown spotted skin and white lateral line. This fish can be used for many things
from a baked cod to fish chowder, it is mild in flavor. Cod is a Cold water fish,
which is available all year.
Average size that goes to the market is 8 – 15 lbs.
Uses: Fish and Chips, Broiled, Baked, Stuffed, Casserole, Fish Chowder
Haddock – grey skin and black lateral line. Haddock is usually purchased with skin on to
distinguish it from cod. They
look very similar. The average size that goes to
market is 3 – 5 lbs.

Baked, Stuffed, Casserole, Fish
Chowder
Pollack – Grey blue skin and white lateral line. Available 12 months out of the year.
Is often used for fish and chips or chowders. The average market size is 8 – 15
lbs.
Uses: Fish and Chips, Fish Chowder
Bluefish – Seasonal, stronger flavor, best size to eat is 3 – 4 lbs. The average market size
is 8 – 15 lbs.
Uses: Grilled, Broiled, Pan Fried, Baked
Salmon - there are many different salmons, pink, coho, keta, king, atlantic, norwegian.
All have different flavor profiles. Salmon is a fish that is farm raised as well. A
wild salmon has a fuller flavor than does a farm raised fish.

Uses: roasted, poached, boudin, grilled, pan
roasted.
Flat Fish These fish lay flat on the bottom of
the sea. They have two eyes on dark (Dextral
side) which faces upward. The lighter side
(sinistral) lays on the bottom usually in sandy
areas. Flat fish also includes, flounder , halibut,
sole and pictured to the left turbo.
Sole – The body is more oval in shape and fins are straight. Dover Sole is difficult to
distinguish unless it is seen as a Whole fish.
Otherwise the consumer could be deceived into
paying more for a cheaper product. Pictured to
the left here is dover sole.
Uses: Pan Fried, Stuffed, Rolled
Flounder – The body is more rounded and the
fins come to a point.
Uses: Pan Fried, Stuffed, Rolled
